Healthy Breakfast Burrito
Whole wheat tortilla.
Half an avocado.
Pepperoni or smoked turkey (or any type of meat you prefer).
1 teaspoon olive oil.
1 slice of cheese or shredded cheese (any type of cheese).
A sauce of your choice (ranch, caesar, etc.).
Salt & pepper.
Small whisk or fork.
Wooden sticks or toothpicks.
Start by putting the skillet on medium heat.
On the cutting board, cut the avocados into slices.
After the skillet becomes hot, add the olive oil and swirl.
Add the pepperoni or meat of choice and cook for 2-5 minutes or until slightly crispy.
Take the pepperoni out of the pan and keep it on the side.
In a small bowl, crack the eggs and mix them with a fork or whisk.
Pour the eggs into the pan and spread it.
Using a spatula, push the edges to the middle and swirl the eggs to the sides. Keep doing this until there's no more liquid.
Cook for 5-10 minutes or until the bottom is golden brown.
Roll the eggs into a pinwheel shape and add the cheese.
On a serving plate, start assembling the burrito by adding the tortilla, pepperoni, eggs, and avocados.
Add some salt, pepper, and a sauce of your choice.
Roll the tortilla into a burrito and secure with wooden sticks.
Cut it in half and enjoy!
