Chipotle Steak Quesadillas
For the quesadillas:
1 flour tortilla.
2 sirloin steaks.
2 tablespoons corn.
2 cheese slices + shredded cheese.
Salt & pepper.
Shredded lettuce (optional).
For the chipotle sauce:
2 tablespoons mayonnaise.
1 teaspoon chipotle powder (you can substitute with paprika + chili powder).
Half a lemon.
1 tablespoon sweet barbecue sauce (or 1 teaspoon honey).
Large pan or skillet.
In a small bowl, mix the mayonnaise, chipotle powder, lemon, and sweet BBQ/honey using a spoon, then set aside.
Season and rub the steaks with salt and pepper.
Put the skillet on medium/high heat and add the steaks.
Cook for 1-2 minutes on each side or until golden brown.
Cut the steak into small slices using a knife.
Place the tortilla in the skillet, then add the cheese slices, steak, corn, and shredded cheese.
Fold the tortilla and cook each side until golden brown and crispy.
Put the quesadilla on a plate and cut it into 3 pieces.
Add some lettuce on the side and drizzle with the chipotle sauce. Enjoy!
